To the owners and staff of Babalúu,
I write to thank you for the excellent meal I enjoyed last night at your restaurant.
To be perfectly frank, I have been somewhat wary of dining at supper club–style establishments in the past, as it has been my experience that such venues often devote all of their energies to the “club” half of their business, to the detriment of the supper.” I was quite glad to see that Babalúu offers a strong balance between the two elements—the food presented to my dining partner and me was uniformly wonderful, and, clearly, your late-evening salsa dancing is a very successful endeavour.
I was invited to the restaurant by Lina Dhingra in order to try your Taste of Peru prix fixe menu. Between my partner and myself, I believe we sampled two-thirds of the available offerings. From the first sips of our pisco sours to the last nibble of our desserts, it was a splendidly well-executed affair. Each dish was nicely—but not fussily—plated, and the flavours reflected the kitchen’s evident care and skill. The ceviche was a particular standout, but, as stated, we were utterly satisfied by everything that was brought to our table by your courteous staff.
Lina tells me that early next year Babalúu will be offering a new “Taste of Colombia” menu as well as various other special events. If my evening at your establishment is any indication, I’m sure these future endeavours will find great success.
